index: update dfi link text/URL and descriptions

Browse Source 
Updates hledger relationship, copyright date, and stars column.

Stars are no longer applicable as this is a private Gitea instance with
user-registration disabled and limited user availability (upon request).

However, `dfi` (docker-finance) repositories continue to be publicly
available for public anonymous access and are licensed under the GPLv3.

Public code changes and pull requests are still accepted (upon request).
